Average Hang Weight: 350-425 lbs. ($1,151-$1,398 investment in artisan beef)

  • SKIRT STEAK ~3 lbs. Best for Marinating, Stir Fry or Fajitas

  • CHUCK ROASTS ~ 4-5 Roasts Marbled, Shredding Roast

  • CROSS RIB ROASTS ~ 2 Roast Marbled, Shredding or Slicing Roast 

  • TIP ROAST ~ 2 Roast Lean, Slicing Roast

  • RUMP ROAST ~ 2 Roast Lean, Slicing Roast

  • EYE OF ROUND ROAST ~ 2 Roast Lean, Slicing Roast

  • BRISKET ~each half 3-5#, Great shredded when cooked/smoked slow and low all day

  • SHORT RIBS ~ 4 lbs. 2 BONE – 8 OZ PIECES Good for slow cooking or smoking

  • STEW MEAT ~ Up to 10 lbs. 1 lb. packages

  • TENDERIZED CUBE/MINUTE STEAKS ~ 8 lbs. – Quick pan fry or chicken fried steak

 

OTHER ITEMS- Oxtail, ½ Heart, ½ Tongue, ½ Liver, ½ Suet, Soup Bones.

GROUND BEEF – 100 lbs.

Choose from: 1 lb., 1.5 lb., or 2 lb. vacuum sealed blocks.

All Trim and cuts not used will be ground into Block & Cleaver Butchers Blend (82% Lean)

 

ARTISAN SMOKED MEATS – Additional Charge 10# increments per product

Jerky, Snack Sticks, Summer Sausage, Hotdogs, and Smoked Beef
